Ingredients:
1 tbs olive oil1/2 cup chopped onion
2 minced garlic cloves
1 cup rice
2 cups fat-free, less-sodium chicken broth
1 (14.5 oz) diced tomatoes, drained
1/3 cup sliced green onions
Preparation:
In large nonstick skillet, heat oil over medium heat. Add onions and garlic, cook 4 mins stirring occasionally. Add rice; chicken broth, and diced tomatoes. Stir to combine. Bring to a boil. Cover and reduce heart, and simmer 20 minutes or until rice is tender.Stir in green onions just before serving.
